The Holy Trinity

Old Acadiana lore has it as onions , celery and green peppers.
However in the deeps south of LA it is purple onion , celery and red peppers. It has more kick..
In Mexico it is onions, tomatoes, and celery.
In Canada it is onions, carrots and celery.

Now I like my Trinity for beef from Canada and fish/ chicken as Old Acadiana Trinity. Never tried the Mexico Trinity..

Has anyone used the Mexico Trinity and what did you cook with it?

Ours (Cuba) is onions, green peppers and tomatoes. We make picadillo, rope vieja, boliche, carne con papas, paella.....you name it.  We also use it as a base for many potajes (bean stews). We don't use much celery.

Not just Canada, but pretty much all of Europe and the US. I use the trinity plus garlic for everything that stews.

Also learned from an almost 100 year old Mexican lady from Wohaca (SP??) that she uses onions, carrots, and celery as a base for everything too in her mexican cooking.  Best receipe I have from her is to boil pork in the trinity (w/ garlic, salt & pepper) for about 45 minutes, then bake for an hour.  Shred & make anything - tacos, burritos, machaca, etc. for a second baking.  Her explanation of the boiling & two bakings was meat down in Mexico usually needed the bacteria in it killed.  I was down there for buiz, and saw kids selling un-refrigerated raw meat out of wagons so understook what she was talking about.

Her cooking used very little tomatoes - unless it was in the sauce.
