I have a 2.5 year old daughter, is it too early to try? I worry about the safety aspect with the hooks and the 3.28 second attention span as well. But I do think she would be "hooked" if she caught something.

It's safe. You just have to do everything except let them reel and feel the fish pulling.
As Curly has said be prepared for about a 5 min fishing trip. Don't expect to much. Everything can be new and exciting, even if they just pick flowers.
They will know they are on a special outing with a loved one.

I started taking my daughter at that age and she loved it. To get her excited I took her to Dick's and let her pick out her rod and some tackle. Now every time we go to the mall she wants to hit the fishing section ..... warms my heart. I taught her how to reel in in our yard with a fake rubber fish tied on so she got the basics w/o a hook involved. By the time we hit the water she knew what she was doing and made for a great day. Now she does everything but cast (i.e. gets dad the worm ). My son is an entirely different story. He doesn't take direction as well as my daughter and just wants to do it his way ..... so I triple check hooks and mash barbs.

The key with taking kids fishing is to make it what THEY want, not what you want. So if that means after 10 min they want to leave and go do something else then that's it until next time. My point is that if you make the trip fun they will want to go again but if they associate fishing with being forced to sit there for hours (or just something that is boring) they will never want to go again. Bringing a camp chair or something for the little one to sit on helps with some kids, plus maybe even something to keep them busy until you have a fish on the line for them to reel.

I have only convinced my daughter to go fishing a few times. Once for a week in Canada, which was such an amazing trip with my daughter. This song truly gets me and captures everything you all are talking about:
