Dinner - 07/18/11

Tonight I finally ate some of the White Perch we caught a couple of weeks back. Don't worry, it was vacuum sealed and frozen. After a quick defrost, here's what I did:

Taco Ingredients
1. Sliced some fresh mango
2. Set out some mixed greens
3. Set out some lime infused salsa
4. Heated soft taco size tortillas

Fish
1. Mixed 1 cup of flour with 1/2 Tsp of Cayenne Pepper, 1/2 Tsp of Black Pepper, and a pinch of Salt. Mix Thoroughly.
2. Heated up some vegetable oil in a skillet.
3. Dipped Perch filets in the flour mix and laid on wax paper
4. With the oil hot, placed each filet in the pan.
5. Cooked for 2 min on each side and removed onto plate covered with a paper towel.

Place the fish on the tortilla, add mango slices, lettuce, and salsa and voila!

That looks really good!

I had some WP last night as well but I went simple. Pan seared the WP with a little fish rub and olive oil....served with red beans and rice.


Time to go fishin' again!
