Sorry, no pictures...it was too good to take the time!
I took home the two behemoth WP that Mo caught yesterday and got 4 really nice fillets....which I ate. Debbie got mesquite port tenderloins.
This one was easy.
First, I sauteed some onions and then added a bag of spinach. The only spices were pepper, red pepper flakes and Emeril's Essence.
Then, I then dredged some sliced zucchini in an egg wash and breaded them with Italian bread crumbs...into the fryer they went.
The white perch? A simple saute in EVOO and a little bit of lime....nothing else! Meat is white, firm and tasty!
