Striper Masgouf

I went to Hooper Island yesterday to catch some stripers and totally got skunked! Out of our party of 5 only one person landed fish. He landed 3 keepers and gave me one... so I did what I do best... I roasted it Masgouf style cool

I butterfly the fish from the top without descaling it. I then hang it close to the fire and let it slow roast... about 45 minutes.

I've been meaning to try to set it up a different way than the traditional way (like in the video) to make it a bit easier... so this worked out perfectly.

To finish it off, I lay the fish scale side down on the hot coals for a minute or two. This is the reason I don't descale it... it protects the meat from burning.

Thanks Gents! It's a traditional Iraqi method that dates back to the Babylonians... Normally done with Carp believe it or not

After I learned how to do it, I really can't get myself to just fillet a fish and put it on the grill LOL.... The flavor that this method brings out is phenomenal! smile When I do fillet, I end up saving the carcass for soup stock.
