The Bilstad's live over in P-ville near my middle son. That's where we heard of Bilstad's Beignets. They had a food truck and we would get some once in a while. Yum is an understatement
Recently, they opened a store in old Ashburn.
Debbie and I have stopped in there for beignets and coffee (which is locally roasted and OUTSTANDING) a few times!
Last week I stopped in there because they advertised a Roasted Turkey Cuban. So I tried it and it was GREAT! Mrs. Bilstad's grandpa is Cuban so she's making a variation of the sammie. Some Cubans would roll over in their grave hearing a "roasted turkey Cuban" but they nailed this one.

They have good beignets! I went shortly after they first opened so they didn't have much if any food options. I'd be down to try that turkey Cuban though! Thanks for posting this.

The one thing I don't like about living rural is that all the best places to eat are far away. I'll add this to the long list of eateries I want to visit.

EAT MY GRITS
We stew polenta grits with whole milk and heavy cream to make succulent grit bowls.
Chicken Salsa Verde- $15.00; Wood-fired chicken slowly cooked in a tomatillo gravy and topped with cotija cheese.
Country Captain Chicken- $15.00; A diverse recipe of fire braised chicken in red pepper ragu, then topped with cotija cheese.
Gochujang Pork Shoulder- $15.00; Slow cooked pork topped with Corn and poblano de gallo.
Cola-Braised Short Ribs- $16.50; Spoon tender beef cooked in a cola au jus and topped with pickled red onions.
