Traditional Maryland Oyster Stew

OYSTER STEW

1 lb bacon
1 medium golden onion
1 stick butter
2 cans diced potatoes
Quart of drained oysters—save liquor
Old Bay/hot sauce to taste
1/2 gallon milk

Crisp the bacon and break into bits. Dice onions.

Cast Iron- Sauté a stick of butter on medium heat. Add Old Bay/Hot Sauce. Once onions are done add oysters and simmer until they draw to just before liking.

Second pot- Potatoes, bacon, oyster liquor, @ 1/2 gallon milk to cover. Medium to low heat (no curdling).

Put it together—enjoy!

Then die the next day! lol


Time to go fishin' again!

My Mom used to make Oyster stew.  Very simple.  Nothing but oysters and liquor in the milk/cream broth.  Some seasoning and Oyster crackers.

Everything but the bacon (add on for later since the wife don't eat bacon).  Sounds like a winner to me.
