White Perch Cooking

How do you guys prepare all these WP that you catch?  I finally got a few decent ones from Beaverdam that will be dinner tomorrow.

I fillet my perch then dredge them in flour, egg wash and fine cracker meal (in that order). Then, I fry them in light oil in a pan. You will know when they are done. A little spray of fresh lime and it's eating time!


Time to go fishin' again!
