Christmas Eve goose Hunt

Matt, blaze, and me. Set up in a cornfield in Maryland hoping to fool some Canada geese into our decoy spread. Lots and lots of geese in the area, but most had other plans for the day. Finally a flock of seven or eight tried to land followed by two more a few minutes later.
We stopped hunting around 11:30 with a total of six Chrismas geese for the table.
I good hunt with great guys, as always a lot of laughs and good story telling.

I hear that the Canadian Geese down here are not as tasty as the ones who stay more to the north, largely because of their diet. Do you have any experience with this?

It is all in the way you prepare and cook it. It can taste like filet or liver no matter where you get it. The diet is mostly the same, both have access to field crops. 

Goose is best eaten meduim rare. In order to do that it is  necessary to cut the breast in half (butterfly) because it is so thick. If you don't the outside is over done and the inside is under cooked. I have some great recipies if you are interested.
